How to make artichokes the Roman way

Roman-Style Artichokes (Carciofi alla Romana)

This classic Roman dish features tender artichokes braised with garlic, fresh herbs, and olive oil, resulting in a flavorful and delicate side dish.


Ingredients:

  • 4 large globe artichokes
  • 2 tbsp lemon juice (for soaking)
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 ½ cups water or vegetable broth

Instructions:

1. Prepare the Artichokes:

  • Trim the tough outer leaves and cut off the top 1 inch of each artichoke.
  • Peel the stem and trim the base.
  • Remove the fuzzy choke (if present) using a spoon.
  • Soak in water with lemon juice to prevent browning.

2. Make the Herb Mixture:

  • In a small bowl, mix garlic, parsley, mint, salt, and black pepper.
  • Gently spread the artichoke leaves and stuff the herb mixture inside.

3. Cook the Artichokes:

  • In a deep pan, heat the olive oil over medium heat.
  • Place the artichokes stem side up and add the water or broth.
  • Cover and simmer for 30-40 minutes until tender.

4. Serve & Enjoy:

  • Serve warm or at room temperature, drizzled with extra olive oil.
  • Enjoy with crusty bread or as a side dish!
