Okra with Lentils (Vegan & Hearty Stew)
This dish combines tender okra and protein-rich lentils in a flavorful tomato-based sauce. It’s a comforting and nutritious meal, perfect with rice or bread!
Ingredients:
- 1 cup lentils (brown or green), rinsed
- 2 cups okra, trimmed and chopped (fresh or frozen)
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, chopped (or 1 cup canned tomatoes)
- 2 tbsp tomato paste
- 3 cups vegetable broth or water
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric (optional)
- 1/2 tsp red pepper flakes (optional, for heat)
- Salt & black pepper to taste
- Juice of 1/2 lemon (for freshness)
- Fresh parsley or cilantro, chopped (for garnish)
Instructions:
1. Cook the Lentils:
- In a pot, bring 3 cups of water to a boil and add lentils.
- Simmer for 15-20 minutes until partially tender. Drain and set aside.
2. Sauté the Aromatics:
- Heat olive oil in a large pan over medium heat.
- Add onions and sauté until golden.
- Stir in garlic, cumin, coriander, turmeric, and red pepper flakes.
3. Make the Sauce:
- Add tomatoes and tomato paste, stirring well.
- Pour in vegetable broth and let it simmer for 5 minutes.
4. Cook the Okra & Lentils:
- Add the okra and cooked lentils to the sauce.
- Season with salt and black pepper.
- Cover and let it simmer for 15 minutes, until okra is tender.
5. Finish & Serve:
- Stir in lemon juice and garnish with fresh parsley.
- Serve with rice, bread, or on its own!
