A rich, spiced rice dish made with slow-cooked lamb or beef, infused with Moroccan flavors.
Ingredients Moroccan Kabsa with meat:
For the Meat:
- 2 lbs (1 kg) lamb or beef (cut into large chunks)
- 2 tablespoons olive oil
- 1 large onion (finely chopped)
- 3 garlic cloves (minced)
- 2 tomatoes (grated or finely chopped)
- 1 tablespoon tomato paste
- 1 preserved lemon (chopped, optional)
- 1 teaspoon ras el hanout (Moroccan spice blend)
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 3 cups beef or lamb broth (or water)
- 1 bay leaf
For the Rice:
- 2 cups basmati rice (rinsed and soaked for 30 minutes)
- 1/2 teaspoon saffron threads (soaked in 2 tablespoons warm water)
- 1/2 teaspoon turmeric
- 1 cinnamon stick
- 1/2 cup raisins (optional, for sweetness)
- 1/2 cup slivered almonds or pine nuts (toasted, for garnish)
Instructions:
Step 1: Cook the Meat
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until golden brown.
- Stir in the garlic and cook for another minute.
- Add the meat chunks and sear until browned on all sides.
- Stir in the grated tomatoes, tomato paste, and spices (ras el hanout, cumin, coriander, cinnamon, ginger, paprika, black pepper, and salt).
- Add the preserved lemon and mix well.
- Pour in the broth (or water) and add the bay leaf. Cover and let it simmer for 1.5 to 2 hours, or until the meat is tender.
Step 2: Cook the Rice
- Once the meat is tender, remove it from the pot and set aside.
- Add the soaked and drained rice to the remaining broth in the pot.
- Stir in turmeric, saffron water, and a cinnamon stick.
- Add raisins (if using) and gently mix.
- Cover and cook on low heat for 15-20 minutes, until all the liquid is absorbed.
Step 3: Assemble & Serve
- Fluff the rice with a fork and transfer it to a large serving dish.
- Arrange the cooked meat on top of the rice.
- Garnish with toasted almonds or pine nuts.
- Serve with harissa sauce, Moroccan salad, or yogurt on the side.
