🍛 Moroccan Kabsa with Meat Recipe

A rich, spiced rice dish made with slow-cooked lamb or beef, infused with Moroccan flavors.

Ingredients Moroccan Kabsa with meat:

For the Meat:

  • 2 lbs (1 kg) lamb or beef (cut into large chunks)
  • 2 tablespoons olive oil
  • 1 large onion (finely chopped)
  • 3 garlic cloves (minced)
  • 2 tomatoes (grated or finely chopped)
  • 1 tablespoon tomato paste
  • 1 preserved lemon (chopped, optional)
  • 1 teaspoon ras el hanout (Moroccan spice blend)
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 3 cups beef or lamb broth (or water)
  • 1 bay leaf

For the Rice:

  • 2 cups basmati rice (rinsed and soaked for 30 minutes)
  • 1/2 teaspoon saffron threads (soaked in 2 tablespoons warm water)
  • 1/2 teaspoon turmeric
  • 1 cinnamon stick
  • 1/2 cup raisins (optional, for sweetness)
  • 1/2 cup slivered almonds or pine nuts (toasted, for garnish)

Instructions:

Step 1: Cook the Meat

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until golden brown.
  3. Stir in the garlic and cook for another minute.
  4. Add the meat chunks and sear until browned on all sides.
  5. Stir in the grated tomatoes, tomato paste, and spices (ras el hanout, cumin, coriander, cinnamon, ginger, paprika, black pepper, and salt).
  6. Add the preserved lemon and mix well.
  7. Pour in the broth (or water) and add the bay leaf. Cover and let it simmer for 1.5 to 2 hours, or until the meat is tender.

Step 2: Cook the Rice

  1. Once the meat is tender, remove it from the pot and set aside.
  2. Add the soaked and drained rice to the remaining broth in the pot.
  3. Stir in turmeric, saffron water, and a cinnamon stick.
  4. Add raisins (if using) and gently mix.
  5. Cover and cook on low heat for 15-20 minutes, until all the liquid is absorbed.

Step 3: Assemble & Serve

  1. Fluff the rice with a fork and transfer it to a large serving dish.
  2. Arrange the cooked meat on top of the rice.
  3. Garnish with toasted almonds or pine nuts.
  4. Serve with harissa sauce, Moroccan salad, or yogurt on the side.
