Green Beans with Olive Oil (Mediterranean Style) 🥗🌿
This light and healthy green bean dish is a classic Mediterranean recipe. It’s simple, flavorful, and perfect as a side dish or a vegetarian main course.
Ingredients:
- 500g fresh green beans, trimmed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 large tomato, chopped (or ½ cup canned diced tomatoes)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- ½ tsp ground cumin (optional)
- ½ cup water or vegetable broth
- Juice of ½ lemon
- Fresh parsley for garnish
Instructions:
1. Sauté the Aromatics:
- Heat olive oil in a pan over medium heat.
- Add chopped onion and sauté until soft.
- Add garlic and stir for 30 seconds.
2. Cook the Green Beans:
- Add green beans and stir for 2 minutes.
- Add chopped tomatoes, salt, black pepper, paprika, and cumin.
- Pour in water or broth and cover.
- Simmer on low heat for 20-25 minutes until tender.
3. Final Touches:
- Drizzle with lemon juice for freshness.
