How to make okra with lentils

Okra with Lentils (Vegan & Hearty Stew)

This dish combines tender okra and protein-rich lentils in a flavorful tomato-based sauce. It’s a comforting and nutritious meal, perfect with rice or bread!


Ingredients:

  • 1 cup lentils (brown or green), rinsed
  • 2 cups okra, trimmed and chopped (fresh or frozen)
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, chopped (or 1 cup canned tomatoes)
  • 2 tbsp tomato paste
  • 3 cups vegetable broth or water
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric (optional)
  • 1/2 tsp red pepper flakes (optional, for heat)
  • Salt & black pepper to taste
  • Juice of 1/2 lemon (for freshness)
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions:

1. Cook the Lentils:

  • In a pot, bring 3 cups of water to a boil and add lentils.
  • Simmer for 15-20 minutes until partially tender. Drain and set aside.

2. Sauté the Aromatics:

  • Heat olive oil in a large pan over medium heat.
  • Add onions and sauté until golden.
  • Stir in garlic, cumin, coriander, turmeric, and red pepper flakes.

3. Make the Sauce:

  • Add tomatoes and tomato paste, stirring well.
  • Pour in vegetable broth and let it simmer for 5 minutes.

4. Cook the Okra & Lentils:

  • Add the okra and cooked lentils to the sauce.
  • Season with salt and black pepper.
  • Cover and let it simmer for 15 minutes, until okra is tender.

5. Finish & Serve:

  • Stir in lemon juice and garnish with fresh parsley.
  • Serve with rice, bread, or on its own!
