Ingredients mayonnaise salad:

  • 2 medium potatoes, boiled and diced
  • 1 cup carrots, boiled and diced

  • 1 cup cucumber, diced
  • ½ cup corn (optional)
  • ½ cup boiled chicken (optional, for a protein boost)
  • 2 boiled eggs, chopped (optional)
  • ½ cup mayonnaise
  • 2 tbsp yogurt (for a lighter version, optional)
  • 1 tsp mustard (optional, for extra flavor)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp lemon juice or vinegar

Instructions mayonnaise salad:

  1. Boil the Vegetables
