Roman-Style Artichokes (Carciofi alla Romana)
This classic Roman dish features tender artichokes braised with garlic, fresh herbs, and olive oil, resulting in a flavorful and delicate side dish.
Ingredients:
- 4 large globe artichokes
- 2 tbsp lemon juice (for soaking)
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 1 tsp salt
- ½ tsp black pepper
- 1 ½ cups water or vegetable broth
Instructions:
1. Prepare the Artichokes:
- Trim the tough outer leaves and cut off the top 1 inch of each artichoke.
- Peel the stem and trim the base.
- Remove the fuzzy choke (if present) using a spoon.
- Soak in water with lemon juice to prevent browning.
2. Make the Herb Mixture:
- In a small bowl, mix garlic, parsley, mint, salt, and black pepper.
- Gently spread the artichoke leaves and stuff the herb mixture inside.
3. Cook the Artichokes:
- In a deep pan, heat the olive oil over medium heat.
- Place the artichokes stem side up and add the water or broth.
- Cover and simmer for 30-40 minutes until tender.
4. Serve & Enjoy:
- Serve warm or at room temperature, drizzled with extra olive oil.
- Enjoy with crusty bread or as a side dish!
